Easy Memorial Day Recipe for Senior Citizens

Creamy Potato Salad

Ingredients:

  • 3 lbs potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped green onions
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions:

  1. Boil the potatoes in a large pot of salted water until tender but still firm, about 15 minutes. Drain and let cool.
  2. In a large bowl, mix mayonnaise, sour cream, parsley, dill, green onions, dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
  3. Add the cooled potatoes to the bowl and toss to coat with the dressing.
  4. Cover the bowl and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld together.
  5. Before serving, stir the potato salad well and adjust the seasoning to taste with salt and pepper.
