Jersey Corn: A Farm-Fresh Produce Guide

It’s that time of year again—Jersey Corn season! You can find this special New Jersey delicacy in markets and farm stands across Hunterdon and Somerset counties in New Jersey. The milky white kernels are fresh and juicy on a summer day. Jersey Corn season starts around July first and continues well into September.

What Makes Jersey Corn So Good?

Sweet corn grown in the New Jersey summers is unlike any other. The state’s fertile clay soil is ideal. The iconic Jersey Corn is a hybrid variety known as silver queen. It has long rows of soft, white kernels. Sweet corn hybrids like silver queen slow the production of sugar into starch, keeping the grains sweet and soft after harvesting.

Preparing Jersey Corn

Boiling and grilling are the two most common ways to make fresh Jersey Corn.

To Boil:

  • Fill large pot three-quarters of the way full with fresh water and bring to a boil.
  • Remove husks and silk from the corn and rinse.
  • Once the water is boiling, add the fresh corn.
  • Return to a boil for 5 minutes.
  • Serve with salt and butter.

To Grill:

  • Leave the husks on and soak the corn in fresh water for 10 to 15 minutes.
  • With the husks still on, place the corn on the grill away from direct flames.
  • Cook for about 20 minutes, turning halfway.
  • Remove from heat and allow to cool slightly.
  • Remove husks and silk.
  • Serve with salt and butter.
